Cold HoldingcriticalInspector note: At the time of the re-inspection the top portion of the pizza cooler was observed being used. Temperatures of the potentially hazardous foods ranged from 44-56F. PIC had stated that all the foods had been placed into the unit around 2 hrs prior. All foods were removed at the time of the re-inspection and placed into the walk-in cooler that had a temperature of 37F. Discontinue use until unit is able to maintain a temperature of below 41F. Ensure all potenitally hazardous foods are being maintained at below 41F.
