CoolingcriticalInspector note: Although observing proper cooling practices one tray of chicken was observed to have been left on a cooling rack after the internal temperature of the chicken had dropped below 140 degrees F. The chicken was promptly transferred to the walk-in cooler.

Handling of Food & IceInspector note: One of the male wait staff was observed grasping breadsticks with his bare hand. While slicing a loaf of bread another was observed grasping the bread with his bare hand. The remainder were observed to utilize gloves or protective barriers to grasp the bread products. Impress upon all staff that bare hand contact is not permitted with ready to eat foods. BISD notes that frequent hand washing was observed.

Hand Cleaner Drying Tissue SignageInspector note: The soap dispenser within the dish room has fallen from the wall. It should be replaced. A portable dispenser will be utilized until it is replaced.
