Cooling (P)criticalInspector note: In basement found multiple food containers cooling. All containers uncovered. As discussed someone should be stirring the food. Other side of basement did have a fruit flie issue but did not see any around the food cooling. This will need to be monitor or can put into walk in.

(A)(2) and (B) Time/Temperature Control for Safety Food Hot and Cold Holding (P)criticalInspector note: Fried cauliflower in reach in at 49F. Unit was at 40F. PIC will need to be sure the lid is closed when not busy so unit can hold food at 41F or below.

Manual and Mechanical Warewashing Equipment Chemical Sanitization-Temperature pH Concentration and Hardness (P)criticalInspector note: Low temperature dishwasher was being used and did not have any sanitizer. This was corrected at this time and was at 75ppm by the time the inspection was done. Please rewash equipment.

Controlling Pests (Pf)Inspector note: Basement prep and in basement found a issue with fruit flies. PIC will need to address this and find another way to store onions and other vegetables. This will help the issue.

Wiping Cloths Use Limitation (C)Inspector note: PIC was setting up sanitizer buckets when I walked in to the kitchen. PIC will need to get a few more so that the cooking line has one. Multiple wiping cloths found.

Miscellaneous Sources of Contamination (C)Inspector note: As discussed PIC will need to remove all non cooking equipment and items form the cooking line. I found person items that could fall into food below.

Nonfood-Contact Surfaces (C)Inspector note: Clean bulk food containers in kitchen and basement shelves on cooking line in place cooking and cleaning equipment.

Cutting Surfaces (C)Inspector note: Cutting boards on cooking line will need to be resurfaced or replaced. Boards had dark stains and scores.
