Temperature strip confirmed that the plate temperature of the mchine is at 160 F. Remove cardboard used to line shelving in the kitchen area.Use a tray or a sheet pan as a shelf surface. Resurface or replace worn and stained cutting boards ont he cold unit in the kitchen.
