Separation Segregation Cross ContaminationcriticalInspector note: Within the basement vegetables and meat products were observed adjacent to each other on the same level of the three-door undercounter refrigeration unit. Any leakage from the meat packaging could contaminate the exterior surfaces of the produce within the unit. It appears that whole vegetable products (peppers herbs) are repackaged in the same location that beef and chicken cuts are packaged. BISD was unable to verify through interview that the staff were properly cleaning and sanitizing the equipment and food preparation surfaces between preparation and packaging.

Food Contact Surfaces CleancriticalInspector note: The staff present at the establishment during the inspection could not discuss proper equipment cleaning and sanitization procedures. No sanitizer was observed beneath the three basin sink. Household dish detergent was observed beneath the sink.

Location AccessiblecriticalInspector note: The hand sink within the food preparation room/three-basin sink room was blocked by several boxes. Two of the boxes were set on top of the sink basin. The hand sink within the room must be free from obstruction at all times.

Food Contact Surfaces CleanInspector note: The cutting board within the food preparation room must be properly cleaned and sanitized to remove the staining. Whereas whole fish are set on ice within the fish display case the entire unit must be cleaned and sanitized to eliminate the potential for cross contamination between fish species and fish shipments. Proper food storage must be provided to eliminate the potential for cross contamination.

Rat droppings were observed within the basement storage area. The ownership and pest control service provider must mitigate these nuisance issues. Holes within the basement walls must be sealed.
