Train Staff the importance of whats mentioned above.

Standards of Identity (C)Inspector note: Chicken wings stored inside reach in cooler - Completely Thawed when package says Keep frozen- I advised CFPM that she can cook those frozen to reheat to the proper temperature. She stated this how they are to prepare them she thaws them for 3 days. I asked for the steps she couldn't provide them. All Keep frozen products are to keep foods frozen until they are reheated to completion of 165F or above
