PIC stated the chicken had been cooked approximately an hour prior and placed into the unit to cool. Discontinue and ensure proper cooling methods are in place and all staff have been trained. Chicken was removed at the time of the inspection.

    Inspector note: Sliced cheese tomatoes onions and butter and other food products inside of the deli style cooler near the stove top with elevated temperatures between 50-55F. PIC stated the foods had been palce in the unit from the morning time. All foods were removed at the time of the inspection and place into the walk-in refrigerator.
