CoolingcriticalInspector note: There are beans cooked earlier in the day and cooling in the upright refrigerator in a deep container. The beans are 45F along the edges and 52F more interior. Properly cool items from 140F to 70F in two hours and then from 70F to 41F in an additional four hours and stir throughout to make sure items cool throughout. (Beans were reheated and will try again to cool using bags of ice and breaking the beans into smaller pans)

Cold HoldingcriticalInspector note: Rice in the walk-in cooler is elevated 48F pork 47F ham 50F. The walk-in door was slightly ajar the owner closed the door and will monitor the temperature to be sure items are dropping to below 41F.
