Inadequate Facilities/Cooling MethodsInspector note: The refrigeration unit at the end of the service line utilized for salad ingredient storage is no longer operating properly. The staff have configured the unit to hold ice. The vegetables and other salad ingredients are stored within metal containers set into the ice. Though no cold holding violations were noted in the foods that were tested properly operating mechanical refrigeration is required. Management stated that two new refrigeration units have been ordered for the main service line. The units should arrive by the end of the week. The Health Division will confirm proper installation and operation of the new units when they arrive.

Dishwashng FacilitiesInspector note: The dish machine is operating with a wash temperature of 154 F and a rinse temperature of approximately 164 F. A final rinse temperature of 180 F or above is required. The dish machine must be serviced. The soiled (right) drain board to the dish machine is leaking to the floor beneath the dish machine. The runoff is presently collected within plastic trays placed beneath the drain board. The leak must be repaired.
