    Inspector note: As discussed during the inspection the mobile kitchen will need to have a segragated and clean location to store clean and sanitized utensils plates and bowls as well as enough shelving / drain board area to properly air dry them - chef stated he will add an additional slotted shelving unit against the wall above the three bay sink - he stated during the inspection that he already has a brand new shelving unit with multi shelves to address the issue. [ just was not on site at the moment ]
