Conformance w/ Approved ProcedurescriticalInspector note: Results for last 2 days of rice testing were not recorded provide complete records for HACCP plan. • When sushi rice is tested with strips a result of 3.6 is determined by operator and when records are reviewed many results in the 3.3-3.9 range were recorded. Sushi HAACCP plan calls for a target of 4.1 so provide change ot recipe or repair meter or replace strips to ensure rice is testing at proper target of 4.1.

Non-Food Contact Surfaces CleanInspector note: Thoroughly clean grease trap to remove all excess grease service at correct intervals and paint or seal unit to ensure no leakage of grease from unit.Presently the unit is dripping grease into the puddle of stagnant water on thr floor creating a ripe environment for pests.

Floors Designed Constructed InstalledInspector note: floor tiles missing and floor is collapsing underneath station where workers walk repair completely to provide stable floor in sushi station • remove all standing water as it provides a water source for rodents and repair plumbing to ensure water does not infiltrate food storage areas
