Variance Requirement (Pf)Inspector note: The establishment was using a cryovac machine last year and they were informed that they cannot continue to do this specialized process until they get approval form the department. The restaurant closed for a while during the pandemic and it appears that they never received approval to do reduced oxygen packaging. There is no signed variance of HACCP plan available on site but there is cryovaced packages coming from their other closed location. Stop all use and distribution of cryovac items and we'll have a meeting to discuss this going forward. (Cryvac items at the location were placed under embargo until the safety of these items can be determined)
