CoolingcriticalInspector note: Review proper cooling procedures with the staff member(s) in charge of reheating the previously cooked commercially prepared meatballs. The meatballs in the pizza station were placed into the flip top unit hot and were at 60 degrees F during the inspection. Meatballs in a lexan container in the basement walk in were at 80 degrees with condensation on the plastic covering the meatballs. Management corrected both issues. Management will review procedures with new staff.
