    Inspector note: Provide proper in-use storage of knives along the main cooking line of the kitchen. The line cooks continue to store knives between the refrigeration units. The line equipment is not continually cleaned and sanitized throughout the day. As such food soil present on the knife is potentially transferred to the equipment and food soil on the equipment has an equal potential to be transferred to the knives. The preparation staff did not exhibit this behavior.
