Food Preparation (C)Inspector note: Cooking greens observed being cleaned in wash bay of 3 compartment sink. Discontinue using 3 compartment sink to wash foods. Use food preperation sink for washing meat and produce.

Thawing (C)Inspector note: Raw beef and chicken thawing at room temperature. Foods must be thawed under running water or under refrigeration.

(B) Cooling Methods (C)Inspector note: Sticky rice cooked 1 hour prior cooling in plastic bus tub at 114F. Spread out rice on metal sheet tray to cool more rapidly. Cooled to 90F in 20 minutes. Soy milk at 125F cooling in deep bain marie for 30 minutes. Split milk into shallow pans to cool rapidly. Use an ice bath underneath to acceelerate cooling.
