Cold HoldingcriticalInspector note: A flat of whole shelled eggs was observed adjacent to the right of the sandwich station. The eggs were warm to the touch. Whole shelled eggs must be refrigerated when not in use. The eggs were not being tempered for later use in the bakery portion of the operation.

Good Hygienic PracticescriticalInspector note: If gloved hands are soiled the soiled gloves should not be utilized to open and close equipment unless the equipment handles are to be cleaned and sanitized after they are soiled.

Non-Food Contact SurfacesInspector note: The plug to the grease trap located beneath the three basin sink should be replaced. The cover to the grease trap should be secured when not in use.

Non-Food Contact Surfaces CleanInspector note: The handles to the walk-in refrigerator freezer and the undercounter units were soiled. The handles must be washed on a routine basis. At present they represent a potential source of cross contamination. Soiled tables beneath the cooking equipment should be cleaned and sanitized routinely. Dried sugar flour and other food soil was observed on the tables.

Hand Cleaner Drying Tissue SignageInspector note: The hand sink along the rear wall of the right side of the building (side with the sandwich preparation) had no soap. All hand sinks must be properly equipped with soap and towels at all times.

Adequate Number Frequency Vermin ProofInspector note: A small pile of cardboard egg shells bags and other waste items were observed on the floor of the right side of the bakery kitchen. The items should be properly discarded to avoid soiling the floor and the footware of the staff working in the kitchen.

Improper Maintenance of FloorsInspector note: The broken and lifting floor tiles beneath the dish machine should be replaced.
