    Inspector note: One of the filter screens above the grill and wok system is damaged. The damaged screen permits airborne grease to flow directly into the duct system and rooftop filtration unit. The screen must be replaced. The owner dispatched an employee to purchase a new screen during the inspection. The screens / filters to the roof top unit must be replaced. The fabric filters have been replaced with adequate frequency. The other carbon filters must also be replaced.

    Inspector note: Clean the filter screens above the grill and wok station to remove the excess grease. The filter screens should be cleaned with greater frequency to eliminate the potential for cross contamination from accumulating grease and reduce the potential for fire. The cleaning contractor stated that the hood system should be cleaned with greater frequency. At present the system is being cleaned every four months. The contractor has recommended a cleaning every 2-months. This schedule should be maintained until further notice. The hood and duct system must be cleaned with greater frequency to reduce the build-up of grease that was observed and reduce the potential for fire.
