Non-Food Contact Surfaces CleanInspector note: Clean the filter screens above the grill and wok station to remove the excess grease. The filter screens should be cleaned with greater frequency to eliminate the potential for cross contamination from accumulating grease and reduce the potential for fire. The cleaning contractor stated that the hood system should be cleaned with greater frequency. At present the system is being cleaned every four months. The contractor has recommended a cleaning every 2-months. This schedule should be maintained until further notice.
