PIC stated that the cheesecake had been inside of the unit from the previous night. Cheese cake was voluntarily discarded at the time of the inspection. Ensure all TCS foods are being maintained at below 41F. Discontinue use of the unit for any TCS foods unless it is able to maintain a temperature of below 41F.
