Inspector note: The ceiling damaged by the ice dam must be repaired. The wall behind the dish machine and along the drainage boards should be cleaned to remove the build up. The food debris and soap residue is collecting along the top of the baseboard and causing the baseboard to separate from the wall. This area should be cleaned and sealed to prevent a future pest problem. The wall behind the cooking equipment along the cooking line should be cleaned to remove grease and food debris.
