Cold HoldingcriticalInspector note: Deli cheese at 47-48F.Chicken salad at 44.8F.management states that temperatures are taken twice daily.PIC needs to ensure that at all times throughout the operation temperatures are met(Recommendation that at least once that temperature of product be taken every two hours to ensure required temperature.Once required temperature has been verified then spot checks randomly can be taken.Management explained proper production procedures but I'm not sure staff is following procedures.
