Clean Equipment & Utensils StorageInspector note: Soiled knives observed being stored in holder at the time of the visit. Discontinue and store all knives in a clean and sanitized area.

Installed and MaintainedInspector note: Grease trap in the basement area appears to backing up onto the floor of the basement dish room/storage room. Address and make any necessary repairs. Dish machine is not to be used until the plumbing issue has been resolved 3 bay sink is being used until full repairs have been made. Cold water faucet in the hand sink in the main kitchen area not operating properly. Address and make any necessary repairs.

Improper Maintenance of FloorsInspector note: Overflow from the grease trap observed on the basment floor. Management to provide a detailed report on the cleaning and sanitizing of the floor. Evidence of what appears to be rodent droppings on the basement floor. Clean and sanitize to remove. Up to date pest control reports were provided at the time of the inspection.
