Discontinue using unit until repairs are made to maintain product temperature at 41F or below. Provide report from refrigeration maintenance company. PIC took immediate corrective action to relocate contents of cooler into unit with holding temperature of 36F. Bucket of sauce covered with temperature of 75F PIC stated made same day. Ensure proper cooling methods. PIC immersed product in ice bath to cool properly to 41F or below.
