Diced tomatoes and cut avacado with elevated temperatures of 55F. PIC stated the the foods were prepared from the morining. Discontinue and ensure proper cooling methods are in place prior to being put out for service. Foods were removed at the time of the inspection to continue the cooling process in the walk-in cooler.

Lower shelf of the preparation table in the main dish room with what appears to be a rust like substance. Clean to remove and resurface.
