PIC states they are waiting for approval and to provide payment to plumber to initiate the work to install the air gap.

Common Name-Working Containers (Pf)Inspector note: In the mop closet there was a spray bottle with fluid inside of of that was unlabeled. PIC indicated that it was sanitizer and labeled it after it was observed and pointed out to them.

(B) and (C) Equipment Food-Contact Surfaces Nonfood-Contact Surfaces and Utensils (C)Inspector note: On the kitchen prep line there is a vegetable dicer with dried encrusted food debris stuck in the blades. At the hot serving line the floors under the equipment have dried encrusted soils. In the dry storage area the floors underneath the shelving have debris and dried encrusted soils. Clean and sanitize food contact and non food contact surfaces of soils.

System Maintained in Good Repair (C)Inspector note: At the hand sink opposite the hot holding cabinet pass the water coming out of the hand sink was 133F. Tk. Repair or adjust so water is at a temperature so that proper hand washing can be done.

Removing Dead or Trapped Birds Insects Rodents and other Pest (C)Inspector note: There was a dead rat on a glue trap at the exterior of the building near where the trash storage area is. PIC states he will let maintenance know so they can remove it. No evidnce of pests were observed in the kitchen or dining areas.

Drying Mops (C)Inspector note: Per PIC the mop that was stored in the mop bucket was used this morning and needs to be stored properly to dry. Store mops that are not in use so they can dry properly to prevent contamination.
