The persons in charge during the inspection who are certified food protection managers were not able to answer questions about illness policy and did not take corrective actions of observed violations and the Health Inspector needed to direct corrective actions person in charge need to be able to take active managerial control and be knowlegable about food safety illness policy and sanitization.

A repair person was called and arrived during the inspection and provided a new irreversible thermometer.
