Although the cutting boards and preparation tables appeared to have been cleaned at the end of the previous business day there is no indication that the surfaces were cleaned and sanitized prior to the start of business on Monday. The surfaces should be cleaned and sanitized at the start of each day and routinely through the day.

In addition the nearby baseboard tiles along the same wall heading into the kitchen are loose and peeling from the wall. The hole should be repaired to eliminate a place of harborage and/or route of entry for nuisance pests. The tiles should be replaced to promote cleaning without further damage to the base of the drywall.
