PIC removed and placed into a blast chiller to ensure temperaures were maintained at below 41F. Discontinue and ensure all potentially hazardous foods are being maintained at below 41F. Sliced limes observed being left out at room temperature at the time of the inspection. PIC stated that they had been recently sliced from the morning. Discontinue and ensure all potentially hazardous foods are being maintained at below 41F. PIC removed the limes and placed them into a refrigeration unit to maintain a temperature below 41F.
