Inspector note: Cut mango wrapped in plastic wrap out on counter 78F / PIC stated that the mangoes were just cut 15 minutes prior. Mangoes were moved to refrigeration. Cut tomatoes 73F sitting out at room temp / PIC had just prepped the tomatoes an hour prior and moved to refrigeration Steak sitting out at 57F / PIC had cooked the steak up to an hour and a half prior and moved to refrigeration. 4 large buckets of cole slaw sitting out at 76F / Slaw was made 20 minutes prior and has been moved to refrigeration Discussed prepping 1-2 items at a time and properly refrigerating them before moving on to the next / Provide proper cold holding temperatures.
