(A )Cooling Methods (Pf)Inspector note: They are cooling a large container of stew in a deep plastic container in the walk-in cooler the stew is 181F. Provide proper cooling methods to be sure the stew will cool from 135F to 70F in two hours and from 70F to 41F in an additional four hours. (worked with the kitchen mangaer and talked about cooling methods. He setup a ice bath and switched the stew to a metal container and put it in the ice bath to chill properly.)
