Provide proper sanitizer levels in the low temperature dishwasher to be sure that items are getting cleaned and sanitized. 2) The main dishwasher is reading wash 130F/rinse 250F but the plates are not very hot to the touch. Have the dishwasher serviced to be sure that equipment is getting cleaned and sanitized (Equipment will need to be washed rinsed and sanitized in the three compartment sink until ecolab can fix the machines)
