Cold HoldingcriticalInspector note: Cooked chicken sliced tomatoes and cheese all with elevated temperatures of between 52-57F. Discontinue and ensure all potentially hazardous foods are being maintained at below 41F. PIC stated that all the foods out of temperature were prepared from the morning around and hour prior. All foods were removed at the time of the inspection and placed into the walk-in cooler to maintain a temperature of below 41F.

Cooked chicken was voluntarily discarded and denatured at the time of the inspection due to it being out of temperature for over 14hrs. Discontinue and ensure proper cooling methods are in place.

Small deli style cooler near register operating at 46F. PIC removed all potentially hazardous foods at the time of the inspection. Discontinue using the unit unless it is able to maintain a temperature of below 41F.
