    Inspector note: If the dish machine is not operated frequently the prime on the sanitizing line is lost and the dish machine fails to properly sanitize the kitchen wares. BISD and the Chef demonstrated how to test for the sanitizer and re-prime the machine. The machine was operating properly at the end of the inspection.
