In-Use Utensils Between-Use Storage (C)Inspector note: Observed two containers filled with soiled 72F water containing in-use mixing spoons. In use utensils should be stored on a clean and sanitized surface in water 135F and above or in cool running water. The person in charge removed the containers and utensils and cleaned and sanitized them before placing them back out into the service area.
