The individual did not know how to test the machine and could not locate test strips for the machine. The dish machine was operating properly after it was run three times.

    Inspector note: Staff at the cafe are not testing the dish machine to confirm that the unit is properly sanitizing the equipment. Once the dish machine is out of use it was observed to lose its prime for two to three cycles. The dishes washed during this two to three cycle period are not properly sanitized. Dishes shall not be washed until the unit is properly primed and sanitizing.
