    Inspector note: After items such as shredded beef or pork are cooekd they are cooled and then stored in open bags. When the items are ready to be reheated the bags are sealed and the items are reheated in the bag. Provide written procedures for approval by the board of health to ensure that procedures are followed. The manager said that if anything etra was heated and leftover then it would be cooled in the sealed bag and reheated the next day.
