Inadequate Facilities/Cooling MethodsInspector note: The core of the cooling mashed potatoes stored within a large metal pot was observed to be approximately 10 degrees above that along the side of the pot. BISD reviewed proper cooling techniques for denser products with the staff. The potato was transferred to a shallow metal pan. The chicken wings were observed to be properly cooled on a shallow metal sheet pans.

Food ProtectionInspector note: A closed plastic container of raw chicken was observed beside a bag of raw hamburger. Management agreed that the chicken should have been stored on a shelf below the chicken. The chicken was moved below.
