All non food contact surfaces in the establishment need to be smooth cleanable and durable. The coffin freezer in the basement is damaged and held together with duct tape. Repair or replace the damaged freezer. The grinder is stored on top of a box of unfinished wood. Finish all wood surfaces in the establishment to provide a surface that is smooth cleanable and durable.

Remove to provide smooth cleanable surface and repair faucets if necessary. There is food buildup throughout the kitchen and prep areas. Clean all refrigerator exteriors and interiors shelving fans faucets to remove food buildup. The compressor fan covers are visible soiled. Clean all refrigeration and compressor covers especially the fridge closest to the dishwasher.
