Hands Washed And Cleaned, Good Hygienic Practices; No Bare Hand Contact With Ready-To-Eat Foods. β’ OBSERVED AN EMPLOYEE IN THE COOK LINE USING BARE HAND TO PLATE READY TO EAT FOOD (GINGER, VEGETABLES). THIS SAME EMPLOYEE WAS ALSO OBSERVED PLATING RAW SUSHI FISH WITH GLOVED HAND, THEN REMOVE COOKED MEAT FROM THE STOVE WITH THE SAME GLOVED HAND, WITHOUT PROPERLY WASHING HANDS BETWEEN RAW AND COOKED PRODUCT. INSTRUCTED THAT BARE HAND CONTACT WITH READY TO EAT FOODS IS PROHIBITED AND INSTRUCTED THAT WHEN SWITCHING FROM RAW TO COOKED PRODUCTS, GLOVES MUST BE CHANGED, HANDS COMPLETELY WASHED, AND NEW GLOVES PUT ON. EMPLOYEE DISCARDED OLD GLOVES, WASHED HANDS AND PUT ON NEW GLOVES. CRITICAL VIOLATION: 7-38-010(A)
